As usual in most clickers, in Idle Animal Evolution the only way to advance and start noticing certain changes is by repeatedly tapping on the corresponding buttons shown on the screen. Your adventure starts out by showing two completely empty boxes that you have to fill in with two different animals. In this case there the creatures that you have to combine are selected by the luck of the draw.

Once you're finished with this first step, you'll see the original animal that you'll start with on the screen in 3D. Gradually, as you tap on the button shown at the bottom center of the screen in Idle Animal Evolution, this animal will mutate and its qualities and physical characteristics will change into some existing in the other chosen animal. That said, it won't be a very fast process, so you'll have to tap on the screen a LOT. However, if you want to speed the process up, you can use your earnings to buy certain tools that will help you advance more quickly.
